Yummy new recipe!


I stumbled across a new recipe attached to some coupons in the newspaper. I (accidentally) altered it slightly, and it came out great! Here it is in case someone else wants to try it out:

Salsa Chicken Enchiladas

prep: 10 min Bake 40 min Makes 6 servings

1 jar (16 oz) Pace Chunky salsa
1/2 cup sour cream
2 teaspoons chili powder
2 cups cubed cooked chicken
1/2 cup shredded mozzarella cheese
6 flour tortillas
1 green onion, thinly sliced

1. stir 3/4 cup salsa, sour cream and chili powder in a medium bowl
2. stir the remaining salsa, chicken, and cheese in a large bowl
3. Spoon about 1/3 cup chicken mixture down the center of each tortilla. Roll up the tortillas and place seam-side up in a lightly greased 11x8-inch shallow baking dish. Pour the salsa mixture over the filled tortillas. Cover the baking dish
4. bake at 350 degrees for 40 minutes, or until the enchiladas are hot and bubbling. Top with a dollop of sour cream and the green onion.
